This is a first for this blog. I've never thought of posting a recipe on the blog before. Mainly because I'm a lazy cook, I go for super easy cooking. I like throw-it-all-in-the-pot kind of cooking. With two kids running around I haven't got the time to follow complicated recipes. Although my husband does ask me to cook loads so he can share his food with his colleagues the next day. And they all seem to love it.
The things we are passionate about in this house are: Meat- we are big meat eaters (sorry vegetarians), we also love good quality produce - I often buy organic vegetables not because of any (no evidence for) nutritional benefit but because I believe they taste better. And cooking from scratch - I rarely get anything from a package unless it's pasta or rice. And good healthy but tasty food - we like food that packs a punch. And as I said before the easier the better without compromising any of the above.
Here's my ever so easy roasted leg of lamb.
Ingredients:
1 Leg of lamb
a bunch of rosemary from the garden
6-8 garlic gloves
salt & pepper
carrots
raw beetroot
potatoes
rapeseed oil

So firstly I put the leg of lamb in the roasting tin, rub it with oil. Stab it about a dozen times with a knife. Then push in cloves of slightly crushed garlic, and sprigs of rosemary randomly. Then season with salt and pepper. Cover fully with foil and put in the oven on 180 Celsius for 3-4 hours.
Test the lamb to see if it's tender enough. If it is remove the foil, then I added raw carrots and raw diced beetroot to the tin, added about an inch of boiling water too, to help cook the veg and also for a lovely jus to use afterwards. It takes about 30 mins to cook the veg and get a nice colour on the lamb.
I added some roast potatoes but these were super easy and most people know how to do these. Just in case you don't know all I did was boil the potatoes for 10 mins in salted water, meanwhile I heated some oil in a roasting tray in the oven and added the par boiled potatoes and cooked for about 45 mins. Turn occasionally to get potatoes well covered in oil and wait for a nice golden colour.
As I said this is a first for me, please give me feedback on what I can do to explain better or any way I can improve it.

Roast lamb is lush - I don't cook it enough! I love one-pot cooking too - saves on washing up!!

ReplyDeleteI haven't had lamb in ages. The husband isn't too keen so we don't have it often but it's one of my favourite meats and that looks absolutely delicious :)
